I tried amaranth for the first time tonight. I like it. I had quinoa the other night and fried it until it popped and thought, "What is this?" there was this fragrant aftertaste..and then I realized, it was amaretto! It was a faint amaretto flavor and for a grain, I was suprised. Then tonight I tried amaranth but I had lasanga planned or shells with sauce and stuff so I didn't have to bake.
I ate cookies first though. Grasshopper ones (mint with chocolate).
Anyway, the amaranth I like more than quinoa for the texture. I don't know if amaranth gives a flavor though.
I had it with sesame seeds and spinach and plain (the amaranth).
